This is an old dinner from a few weeks ago….but I still wanted to share it with ya!
Start with a baked sweet potato.
Next, sauté some greens and set aside. These are beet greens, but you could use spinach or kale.
Then, cook some chorizo. I bought 1/4lb. from whole foods because I was just making this meal for myself. Matt was at happy hour.
Once your chorizo is finished, add the sautéed greens and mushrooms and heat until the mushrooms are cooked thoroughly. This also gives you a chance to heat everything back up. I spiced it up a notch with salt, pepper, garlic powder, onion powder, and red pepper flakes.
Take the skin off the sweet potato and mash it on your plate.
Add the contents of the pan to the mashed sweet potato and drizzle some maple syrup on top. This dish totally has that sweet/spicy/savory taste all in one.
